Catching up on life - Big Fun Under the Big Top

We have had a great Saturday. We all slept in, ate donuts for breakfast, and have just been hanging out around the house. Collin and Clint went to Pancho's for lunch (gag!) and I've been catching up on craft projects and doing laundry. I think we're going to rent Shutter Island tonight and get ready for tomorrow's festivities. I am so thankful for this relaxing day - we all needed it!

I have totally gotten behind on blogging - what's new, I'm nothing if not consistent :) - so here's my attempt at starting to catch you up on some fun things we've done this month. Be sure to check back because I'm really attempting to get all caught up this next week.

A few weeks ago, courtesy of my rockin' parents, we went to the Circus. We had fabulous seats and to say that Cayden was thrilled would be an understatement. He loved it. He sat with
wide eyes, trying to take it all in the entire time. It was so much fun to watch him. I shared this with my Bible Study girls a few weeks ago, but I actually got a little teary eyed sitting there. Sounds ridiculous, I know, but I am one of the most tender hearted people that ever was and as I was sitting there with my parents (whom I thought just a couple of short years ago that I would never live close to again), and my hubby, and my son, I just lost it. God is so good to me. He has given me a life that I don't deserve - one that I am so grateful for. I sat through the circus feeling so blessed and joyful. And watching this little cutie made it so much fun...

It was a great day at the Circus! We thought about letting Cayden ride the elephant but he wouldn't have enjoyed it this year. Maybe next year!

Stop what you're doing and go make this...

I am not even kidding. I have a recipe that will knock your socks off. I promise that a post of substance is coming but I would be doing a serious inservice to the 3 people that read this blog if I didn't share this recipe. I bake at least one sweet treat per week and this week it was chocolate sheet cake (but in cupcake form) with the best icing I've ever had in my life. Seriously. And I've eaten a lot of icing in my days. This icing is light and fluffy and not the least bit ooey-gooey powdered sugary tasting. I imagine it would be good on just about anything although my favorite way to eat it right now is off my finger :) Collin and I both took the chocolate sheet cake cupcakes with this icing on it to Bible study last night and we each had kids (I call them kids, they're in college. I'm getting old!) lick the icing off the top of the cupcakes like they'd never eaten anything before in their life. I'll stop hyping it up just in case you're crazy and don't like it as much as I think you will, but you should seriously make this icing to go atop something magical soon. You will not regret it.


The Best Frosting I've Ever Had
-Pour 5 T of flour into 1 cup of milk. I used whole milk because it's full of fat and let's face it, it just tastes better.
-Whisk together until combined and put it in a saucepan over medium heat. Whisk as it heats up and thickens and stop once the mixture is very thick. Let the mixture cool completely.
-Once mixture is cool, add 1 t vanilla.
-In a bowl, mix 1 cup of sugar with 1 cup of butter. Whip it around until it’s light and fluffy, scraping the bowl once or twice to make sure it’s all mixed well.
-Add the cooled flour/milk/vanilla mixture.
-Whip the mixture on medium-high speed until the mixture resembles whipped cream. I did mine for almost a minute of pretty hard beating and it was done.

*Warning: This is not pretty icing so don't expect it to look beautiful on your baked goods. But it sure is tasty!

Finished Fireplace and a Ladies Man


They finished the fireplace Friday afternoon! Pay no attention to the decorations - I just threw some things up there in my excitement of having a mantle in the family room to decorate! I'll be working more on that this week. But for now, I am thrilled that the fireplace is finished and we are busy getting our house back together. That's pretty much been our weekend - except for a brief but fun excursion to the Dallas Arboretum yesterday which I'll post about sometime soon. The fireplace is not exactly what I had envisioned but I love it! And sorry about the poor quality picture - I took it with my iPhone. My dad is coming over tomorrow to finish the wiring and then it should be completely done. Yay!


Before I close, I have to tell a funny story. Collin went to pick up Cayden from the nursery today and was told by the teacher that Cayden is "quite the ladies man". Apparently, the girls in the class "were all over him today - touching his shirt and pointing at him". Hahahaha! I have been laughing about that all day! And, I should mention that Cayden had the best day yet in the nursery this morning. He didn't cry at drop off (a first ever for him), played great the whole time (prob because he had a bunch of cute girls flirting with him - ha!), and was happy as a clam at pick up. I think we've finally turned a corner. Collin dropped him off and picked him up today and I'm wondering if that had anything to do with it. We'll see next week because I'll be the one doing both since Collin will be out of town. Hopefully this newfound love of the nursery will stick :)

It's that time of year again...

On Friday afternoon, Collin took off work a couple of hours early and we met the Simpson's out at the Pumpkin Patch. We visited the same place that we went last year but this year was a much better experience. Last year we went on a Saturday and it was reeeaaalllly crowded. Since we went on a Friday afternoon this year, there weren't nearly as many people and we were able to let Cayden explore a lot more. The weather was sadly a little warmer than we would have liked (hence why my child is wearing shorts in these pictures) but after the sun started going down, it got pleasant. There were a ton of adorable photo ops but getting Cayden to cooperate at this very curious, explorative stage of his life was difficult and we didn't get a lot of posed photos. But we got lots of candid ones and those are some of my favorites anyway!
